Vegan Teriyaki Burger

Here's a delicious recipe for a Vegan Teriyaki Burger that uses plant-based ingredients for a sweet and savory flavor combination.

Ingredients:

For the Burger:

1 package of Impossible Burger patties (12 oz)

4 vegan burger buns (dairy-free and egg-free)

1 tablespoon sesame oil (for cooking)

1/2 cup sliced mushrooms (optional, for added umami flavor)

1 tablespoon olive oil (for grilling or sautéing)

1/2 cup fresh pineapple slices (grilled or fresh, for garnish)

1/4 cup green onions (chopped, for garnish)

Lettuce (such as butter lettuce or arugula)

Cucumber slices (optional for crunch)

For the Teriyaki Sauce:

1/4 cup soy sauce or tamari (for gluten-free)

1 tablespoon maple syrup (or agave syrup)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon fresh ginger, grated

1 teaspoon garlic, minced

1 tablespoon cornstarch (optional, to thicken the sauce)

1 tablespoon water (for the cornstarch slurry)

Instructions:

1. Prepare the Teriyaki Sauce:

In a small saucepan, combine the soy sauce, maple syrup, rice vinegar, sesame oil, grated ginger, and minced garlic.

Bring to a simmer over medium heat and stir occasionally. If you prefer a thicker sauce, mix the cornstarch and water in a small bowl to create a slurry, then add it to the sauce. Stir until the sauce thickens (about 2-3 minutes).

Remove from heat and set aside to cool.

2. Prepare the Impossible Burger Patties:

Heat a skillet or grill pan over medium-high heat and add a bit of olive oil.

Season the Impossible Burger patties with salt and pepper (or any additional spices you like) and cook for 3-4 minutes per side until golden and cooked through.

Brush some of the teriyaki sauce on the patties during the last minute of cooking to add flavor.

3. Grill the Pineapple & Mushrooms (optional):

For extra flavor, grill or pan-sear pineapple slices until golden brown on both sides. This enhances the sweetness and adds a smoky flavor to your burger.

If using mushrooms, sauté them in a little sesame oil or olive oil until golden and tender. This adds umami to complement the teriyaki sauce.

4. Toast the Buns:

Slice your vegan burger buns and lightly toast them in the skillet or under the broiler for a bit of crunch.

5. Assemble the Burger:

Spread a layer of teriyaki sauce on both the top and bottom buns.

Place the Impossible patty on the bottom bun.

Layer with lettuce, grilled pineapple, sautéed mushrooms (if using), and a few slices of cucumber for extra crunch.

Garnish with chopped green onions for a fresh, flavorful touch.

6. Serve and Enjoy:

Place the top bun on the burger and serve with your favorite side, like crispy fries, sweet potato wedges, or a fresh salad.

This Vegan Teriyaki Burger combines the savory flavor of the Impossible patty with a sweet and tangy homemade teriyaki sauce, grilled pineapple, and fresh toppings for a mouthwatering experience!
